This ingredient is a filtrate of honey fermented by a consortium of microorganisms including Acetobacter, Brettanomyces bruxellensis, Komagataeibacter xylinus, Schizosaccharomyces pombe, and Zygosaccharomyces. Because honey is an animal (insect) product, this ferment filtrate is not considered vegan, though it does not require killing bees.
