High fructose corn syrup (HFCS) is a liquid sweetener produced by enzymatic hydrolysis of corn starch to yield glucose, followed by partial enzymatic isomerisation to convert a portion of the glucose to fructose. It contains approximately equal amounts of fructose and glucose and is almost exclusively produced from genetically modified corn.
