E471 consists of mono- and diglycerides of fatty acids, including glyceryl monostearate and glyceryl distearate, widely used as emulsifiers. They are produced by partial glycerolysis of triglycerides from either animal or vegetable fats. They function as emulsifiers and stabilisers in food and cosmetics.
