Hydroxylated lecithin is chemically modified lecithin produced by treating lecithin with hydrogen peroxide and an organic acid such as acetic or lactic acid, converting fatty acid olefins into vicinal diols. Lecithin source material can be derived from plants (e.g. soy, sunflower) or animals (e.g. egg yolk), so origin is not guaranteed vegan or vegetarian without further specification.
