Isomalt is a complex mixture of sugar alcohols obtained by enzymatic treatment of sucrose, consisting mainly of 6-O-alpha-D-glucopyranosyl-D-glucitol and 1-O-alpha-D-glucopyranosyl-D-mannitol. It is used as a humectant and bulking agent in cosmetics and as a sweetener in food.
