Azodicarbonamide (ADA) is a synthetic yellow-orange crystalline chemical compound used as a flour treatment agent and dough conditioner in commercial baking, where it strengthens gluten and improves dough handling and crumb structure. It is permitted in the United States at up to 45 ppm but is not authorised in the EU, the UK, or Singapore, and has been widely nicknamed 'the yoga mat chemical' due to its parallel use as a blowing agent in foamed plastics. Much of the U.S. baking industry has been voluntarily phasing out its use.
