Caproic acid, also known as hexanoic acid, is a six-carbon fatty acid with a fatty, cheesy odor. It occurs naturally in animal fats and milk, but is also produced from plant oils (e.g. coconut and palm kernel oil) and via synthetic or fermentation routes, so vegan sources exist.
