Carrageenan is a natural polysaccharide extracted from red seaweed (Rhodophyta), particularly species such as Chondrus crispus (Irish moss) and Kappaphycus alvarezii. It is widely used as a thickener, gelling agent, and stabiliser in food, cosmetic, and pharmaceutical products.
