Cereulide is a heat-stable cyclic depsipeptide toxin produced by certain strains of Bacillus cereus, B. megaterium, and related species. It is a potent cytotoxin that destroys mitochondria, causing nausea and vomiting, and is most commonly associated with improperly stored or reheated rice. Unlike many toxins, cereulide is not destroyed by reheating, cooking, or boiling once formed.
