Chitosan is a linear polysaccharide composed of randomly distributed β-(1→4)-linked D-glucosamine and N-acetyl-D-glucosamine, produced by treating chitin from crustacean shells (typically shrimp) with an alkaline substance such as sodium hydroxide.
