Gentiobiose is a disaccharide composed of two D-glucose units joined by a β(1→6) linkage. It occurs naturally as a component of crocin in saffron and can also form as a by-product of glucose caramelization or starch hydrolysis, or be produced via enzymatic hydrolysis of certain glucans.
