Glutamic acid is a non-essential alpha-amino acid found widely in both plant and animal tissue, and is the most abundant excitatory neurotransmitter in the vertebrate nervous system. It is used in biosynthesis of proteins and as a precursor to GABA. Commercial production can be from plant fermentation, synthetic synthesis, or animal-derived sources, making the vegan status dependent on source.
