Invertase is also known as Beta-fructosidase.

Invertase is an enzyme that catalyses the hydrolysis of sucrose into glucose and fructose, produced commercially by fermentation using Saccharomyces cerevisiae (baker's yeast). It is used in confectionery to prevent sugar crystallisation and to produce invert sugar.
