Riboflavin (Vitamin B2) is a water-soluble B vitamin used as a food colorant, to fortify foods, and as a dietary supplement. It is produced synthetically, by microbial fermentation using organisms such as Bacillus subtilis or Ashbya gossypii, or in rare cases from animal sources.
