Sodium Stearoyl Lactylate is an emulsifier produced by reacting lactic acid with stearic acid and neutralizing with sodium hydroxide or calcium hydroxide. The stearic acid may be derived from animal (tallow) or vegetable sources, making the overall origin dual.
