Trehalose is a naturally occurring disaccharide formed by two α-glucose units, synthesised by bacteria, fungi, plants, and some invertebrates as an energy source and cryoprotectant. Commercial trehalose is produced primarily by enzymatic conversion of starch (plant-derived) and is considered vegan.
