Xanthan gum is a polysaccharide produced by bacterial fermentation of carbohydrates using the microorganism Xanthomonas campestris. It is widely used as a thickener, stabiliser, and emulsifier in food and cosmetic products. Occasionally, animal-derived substrates or purification agents such as lysozyme may be used in its production.
