Cereulide is a heat-stable cyclic depsipeptide toxin produced by certain strains of Bacillus cereus, B. megaterium, and related species. It is a potent cytotoxin that destroys mitochondria, causing nausea and vomiting, and is most commonly associated with improperly stored or reheated rice. Unlike many toxins, cereulide is not destroyed by reheating, cooking, or boiling once formed.

Also known as Bacillus cereus emetic toxin, Bacillus cereus toxin, emetic toxin, fried rice syndrome toxin, heat-stable toxin, rice reheating toxin
