Sorbitan Oleate (Sorbitan Monooleate) is an emulsifier produced by reacting oleic acid with sorbitol. Oleic acid may be derived from animal or vegetable sources; the vegetable-derived version is commercially known as Span 80V, while the standard grade is Span 80.
