Stearin is the general name for the glycerides of stearic acid (monostearin, distearin, and tristearin), with tristearin being the principal component. It is the main constituent of tallow and suet but can also be derived from vegetable sources. It is used as a thickener, emulsifier, and candle-making ingredient.
