Agar (agar-agar) is a gelatinous polysaccharide extracted from red algae, primarily Gelidium and Gracilaria species. It is widely used as a gelling, thickening, and stabilising agent in food, cosmetics, and microbiology. It is a common plant-based alternative to animal-derived gelatin.
