Cellulose gum (sodium carboxymethyl cellulose, CMC) is a cellulose derivative obtained by chemically modifying plant-derived cellulose with carboxymethyl groups. It is widely used as a thickener, stabiliser, and water-retention agent in food, cosmetics, and pharmaceuticals.
