Lactase (beta-galactosidase) is an enzyme that catalyses the hydrolysis of lactose into glucose and galactose. It is commercially produced from fungi or yeast (e.g. Aspergillus oryzae, Kluyveromyces lactis) via microbial fermentation and is used in the dairy industry to produce lactose-free products.
