Potassium bromate (KBrO₃) is an inorganic compound and strong oxidising agent sometimes added to flour as a dough conditioner and improver to strengthen gluten and increase loaf volume. Due to its potential carcinogenicity, it has been banned as a food additive in the EU, UK, Canada, and many other countries, though it remains conditionally permitted in some baking uses in the United States; California enacted a ban effective January 1, 2027.
