Proteases
A group of protein-digesting enzymes used as processing aids, including Protease, Papain, Bromelain, and Ficin. Some subtypes are plant-derived (papain from papaya, bromelain from pineapple, ficin from fig) while others are microbial or animal-derived (e.g. pancreatic protease).
