Riboflavin-5-phosphate, also known as flavin mononucleotide (FMN), is a more water-soluble form of riboflavin (vitamin B2) used as a food colourant and nutritional supplement. It can be produced via microbial fermentation or chemical phosphorylation of riboflavin.
