Sorbic Acid is a naturally occurring polyunsaturated fatty acid originally isolated from the berries of the rowan tree (Sorbus aucuparia). Today it is predominantly produced by chemical synthesis. It is widely used as a preservative to inhibit mold and yeast growth in food and cosmetic products.
