Xylitol is a pentahydric sugar alcohol (polyol) with the molecular formula C5H12O5, naturally occurring in small amounts in many fruits and vegetables. It is commercially produced by hydrogenation of xylose derived from plant sources such as birch wood or corncobs, and is widely used as a sweetener and humectant.
