Anthocyanins are a group of water-soluble flavonoid pigments responsible for the red, purple, and blue colours of many fruits, vegetables, and flowers. They are extracted from plant materials such as berries, grapes, and red cabbage, and are used as natural food colourants (E163). They are exclusively plant-derived.
