Gelatin is a protein obtained by partial hydrolysis (boiling) of animal skin, connective tissue, or bones, typically from cattle or pigs. It is an edible form of collagen used as a gelling agent, stabiliser, or thickener in food, pharmaceuticals, cosmetics, and various industrial applications such as photographic film and adhesives.
